Chocolate Shavings
Thin sheets of melted dark chocolate, chopped into crisp, crackly shavings — the ultimate add-in for churned ice cream. These aren’t just chocolate chips tossed into your churn. This is a crackly chocolate layer that’s been melted, spread thin, frozen fast, and chopped into little flakes that snap and melt in your mouth. No tempering, no fuss — just perfect texture that stays soft enough in frozen desserts. Use them in churned ice cream, layered into scoops, or as a bold topping for sundaes and cones.

Equipment
- Heatproof mixing bowl
- Small saucepan
- Spatula
- Baking sheet
- Parchment paper
- Sharp knife
- Airtight container
Ingredients
- 180 g chocolate chips or baking chocolate
- 1/2 tsp refined coconut oil
Instructions
- Set up a double boiler: place a heatproof bowl over a pot of gently simmering water (the bottom of the bowl should not touch the water).
- Add chocolate and coconut oil to the bowl.
- Stir constantly until fully melted and glossy. Remove from heat.
- Line a baking sheet with parchment paper.
- Pour melted chocolate onto the sheet and spread it very thinly with an offset spatula or back of a spoon — aim for credit card thickness.
- Freeze for 10–15 minutes, or until fully hardened.
- Once hardened, chop chocolate into small shards or shavings with a sharp knife.
- Use immediately or store in an airtight container in the freezer until ready to mix into or layer over ice cream.
Notes
- Coconut oil keeps the chocolate from turning rock-hard in frozen desserts — but skip it if you prefer a firmer texture.
- For even thinner chocolate, warm your spatula and spread quickly.
- Store shavings flat in parchment layers to prevent clumping.
