Dark Chocolate Shavings Recipe

Dark Chocolate Shavings

Chocolate shavings might look simple, but they’re one of those finishing touches that elevate almost any dessert. Unlike large chunks or chips, shavings are paper-thin, crisp, and melt instantly the second they hit your tongue. They add a subtle snap and a rush of chocolate flavor without overpowering the texture of the dish. Whether sprinkled over cakes, folded into mousse, dusted across whipped cream, or scattered over tiramisu, chocolate shavings turn everyday sweets into something that looks (and tastes) pâtisserie-worthy.

The beauty of shavings lies in balance. Their delicate form means you get that intense chocolate hit without biting into a rock-hard piece. The mouthfeel is light, crisp, and elegant, perfect for desserts where texture matters as much as flavor. And because the chocolate is spread thinly before being chilled and chopped, you can control the size, shape, and thickness of your shards to match your dessert. Wide, rustic shards look dramatic on layer cakes, while fine curls add a refined garnish to soufflés and panna cotta.

Best of all, they’re incredibly versatile. Use them as a garnish, a layer, or even folded into fillings for crunch. Top a pile of whipped cream with dark chocolate curls and you’ve suddenly got a showpiece dessert. Scatter them on pavlova, fold into semifreddo, or pile them high over hot chocolate. One simple technique unlocks endless ways to add flavor, texture, and elegance.

“Chocolate shavings are proof that sometimes the smallest details make the biggest impact.”

Why You'll Love It

Most recipes call for chocolate chips or chunks, but they don’t always deliver the best experience, especially in creamy or delicate desserts. Chips can feel clunky and too firm, while chunks freeze hard and disrupt texture. Shavings solve this problem. Their thinness means they break softly on the bite and melt in sync with whatever they’re paired with.

The other advantage is visual. Shavings instantly add elegance and that bakery-finish polish. Think of a tall layer cake with glossy curls piled on top, or a silky custard with a scattering of fine shards. They give the impression of effort, even though they’re incredibly simple to make. It’s this mix of beauty, texture, and flavor that makes chocolate shavings one of those “small but mighty” dessert elements every baker should have in their toolkit.

Elegant Texture

Light, crisp, and melt-in-your-mouth.

Intensely Chocolaty

More flavor impact than cocoa powder, more delicate than chunks.

Versatile Use

Garnish cakes, swirl into mousse, scatter on pavlovas, or top hot drinks.

Customizable

Make wide rustic shards, delicate curls, or fine flakes depending on your dessert.

From Scratch

Just chocolate and a touch of oil, prepared so it never clumps or seizes.

Ways to Customize These Dark Chocolate Shavings

  • Use milk chocolate for a softer, creamier bite.

  • Try white chocolate for a striking visual contrast.

  • Sprinkle with sea salt before chilling for a salty-sweet crunch.

  • Add a pinch of espresso powder to the melted chocolate for mocha notes.

  • Create curls by dragging a vegetable peeler across a chilled chocolate block.

Important Recipe Notes

Choose Quality Chocolate

Use good dark chocolate (60–70%) for the best snap and flavor.

Add a Touch of Oil

A little coconut oil helps keep shavings delicate and easy to chop.

Spread Thin

Aim for credit card thickness. Too thick, and you’ll get chunks, not shavings.

Work Cold

Chill or freeze before chopping for clean shards.

Storage

Keep them frozen in a container until ready to use; they’ll stay crisp and separate.

Extra Melted Chocolate

Equipment

  • Heatproof mixing bowl
  • Small saucepan
  • Spatula
  • Baking sheet
  • Parchment paper
  • Sharp knife
  • Airtight container

Ingredients

  • 180 g chocolate chips or baking chocolate
  • 1/2 tsp refined coconut oil

Instructions

  • Set up a double boiler: place a heatproof bowl over a pot of gently simmering water (the bottom of the bowl should not touch the water).
  • Add chocolate and coconut oil to the bowl.
  • Stir constantly until fully melted and glossy. Remove from heat.
  • Line a baking sheet with parchment paper.
  • Pour melted chocolate onto the sheet and spread it very thinly with an offset spatula or back of a spoon — aim for credit card thickness.
  • Freeze for 10–15 minutes, or until fully hardened.
  • Once hardened, chop chocolate into small shards or shavings with a sharp knife.
  • Use immediately or store in an airtight container in the freezer until ready to mix into or layer over ice cream.

Notes

  • Coconut oil keeps the chocolate from turning rock-hard in frozen desserts — but skip it if you prefer a firmer texture.
  • For even thinner chocolate, warm your spatula and spread quickly.
  • Store shavings flat in parchment layers to prevent clumping.
